The Best Chicken EVERRRRR

I make this chicken all the time.

I like to call it The Best Ever Chipotle Chicken  (because I am really creative with names)

This chicken is awesome on a mexican style salad, mexican style pasta, tacos, burritos, enchiladas, nachos, pizza, sandwich, etc etc etc. Or eat it by itself. Whatever floats your boat. ;)

All you need is....

A Rotisserie Chicken or a large Rotisserie Chicken breast

1 red onion, quartered and thinly sliced

4 cloves garlic, chopped

1 can chipotle in adobo sauce (you will use 3-6ish tablespoons depending on how spicy you like it)

1/2 can chicken broth

large handful of cilantro, chopped (optional..but really good with it!)


This is how you throw it together...

Shred (or pick it all apart with your fingers if you are me) the chicken

In a large saute pan or dutch oven, heat some olive oil and saute your onion and garlic until very tender.

Throw in the chicken and adobo sauce and mix well. (I add salt and pepper here to taste)

*check the spice level as you add in your adobo sauce. start with a little and keep adding until you find the "kick" you are looking for.*

Next, add in the chicken broth and simmer until warm or for an extra 30 min on low. (i like to let it simmer for a while, because the flavor will intensify and the chicken will be extremely tender- but you don't have to do this)

*check every once in a while to see if you need a little more moisture in the pan. you may need to add more chicken broth here and there. You don't want it to look like soup, but there should be some noticeable liquid in the pan.*

Stir in the cilantro before you serve it.

People- this is extremely delicious. EXTREMELY.

There will be leftovers and this chicken is good on anything. Just sayin'.
